We select fruit from sandy and stony vineyards in Langhorne Creek, ferment in open vats before maturation in seasoned oak barrels and tank to retain the aromatic lift from these soil types. All small proportion of wine from clay/ loam vineyards fills out the palate and gives the wine length of flavour.
Using a secret liqueuring recipe this richly flavoured, deep coloured sparkling Shiraz displays dark berry fruit aromas, sweet plum flavours, silky tannins and a rich, velvety smooth palate.
Enjoy this classic Australian sparkling wine with Christmas pudding, duck dishes, roast meats or simply by itself. Suggested serving temperature is 8° to 10°C.
